PiYo Define Lower

My favorite Piyo workouts are Lower Define and Upper Define. They are both quick, easy, effective workouts. This is the warrior series from the Define Lower workout. It is a great variation on the traditional yoga warrior series because PiYo does not use static moves, but instead works on slow movements to strengthen while stretching.

What Can Shakeology Do For You?

I am ALWAYS asked, Melissa,why do YOU drink Shakeology?

I used to skip breakfast all the time. I was never hungry in the
mornings, and when I did have breakfast, I seemed to be hungry all day
long. Then I started trying meal replacement shakes. They were easy, but
many would only last about 2 hours before I was hungry and wanting
lunch. Then I found Shakeology. The truth is that it took me a long time
to jump on the Shakeology bandwagon. It is expensive, and when you are
on a TIGHT budget, justifying the cost for something like that can be
tough. I decided to at least TRY it, so that I could tell others about
it (since I am a coach). I was surprised that it actually kept me full
until lunch! As an added bonus, I feel like I gave a little more energy,
and it curbs my junk food cravings. I truly believe that Shakeology is
an investment in my health. Both Jeff and I drink it everyday now. When I
miss a day, my body can tell.

I know, I know. It totally sounds
cliche when I say stuff like that. My sister-in-law rolled her eyes when
I said that to her. Then she ordered it for herself to give it a try.

BBQ Quinoa Chicken Salad

I've posted this recipe on here before, but I am constantly getting requests from folks that want to see it again. Here you go....

BBQ Quinoa Chicken Salad

1 cup cooked quinoa
1/2 cup corn
1/2 cup black beans, rinsed and drained
1 cup shredded BBQ chicken
1 avocado, chopped
2 tbsp White Cheddar cheese, shredded
2-4 tbsp BBQ sauce
2 scallions, chopped
cilantro for garnish


In a large bowl, toss together the quinoa, corn, black beans, chicken and avocado. Season with salt and pepper
Transfer mixture onto a bowl and top with shredded cheese, BBQ sauce, scallions and cilantro.
Serve warm or at room temperature


This recipe calls for already cooked chicken so plan ahead! I prefer to cook my chicken in the crockpot, using 6 chicken thighs, 1 white onion sliced and 1/2 cup of BBQ sauce. I cook on low for about 6-7 hours and then shred and refrigerate for later.

No-Bake Cheesecake with Pecan Caramel

A healthier (sort of ) dessert. This looks so amazing!!!! I LOVE caramel! Be sure to Share this post to save to your wall.

16 low-fat honey graham crackers (4 large cracker sheets)
1/4 cup granulated sugar
2 tablespoons butter, melted
Cooking spray
12 ounces 1/3-less-fat cream cheese, softened
12 ounces fat-free cream cheese, softened
1/2 cup granulated sugar
1/4 cup crème fraîche
2 teaspoons vanilla extract
1/4 teaspoon salt
3 tablespoons cold water
2 1/4 teaspoons unflavored gelatin
1 cup fat-free milk
2 tablespoons butter
2/3 cup packed brown sugar
1/3 cup maple syrup
1 tablespoon whipping cream
1/4 teaspoon salt
2 tablespoons bourbon
1/2 cup chopped pecans, toasted


1. To prepare crust, place crackers in a food processor; process until finely ground. With motor running, add 1/4 cup granulated sugar and 2 tablespoons melted butter to cracker crumbs through food chute; process until blended. Place crumb mixture in a 9-inch springform pan coated with cooking spray; press evenly into bottom of pan. Freeze 20 minutes or until firm.
2. To prepare cheesecake, combine cheeses, 1/2 cup granulated sugar, and crème fraîche in a large bowl; beat with a mixer at medium speed until smooth. Beat in vanilla and 1/4 teaspoon salt. Combine 3 tablespoons cold water and gelatin; let stand 2 minutes or until gelatin dissolves. Heat milk in a small saucepan to 180° (do not boil). Stir gelatin mixture into hot milk, stirring well. Beat gelatin mixture into cheese mixture. Pour cheese mixture into prepared crust; chill 2 hours or until set.
3. To prepare the caramel, melt 2 tablespoons butter in a small saucepan over medium-high heat. Add brown sugar and next 3 ingredients (through 1/4 teaspoon salt); stir with a whisk just until sugar melts. Bring mixture to a boil; reduce heat to medium, and cook 5 minutes (do not stir). Remove pan from heat. Stir in bourbon and toasted pecans. Cool slightly.
4. Slice cheesecake into 16 wedges. Place 1 wedge on each of 16 plates; drizzle 1 tablespoon caramel over each serving.

Choose your treats wisely!

An occasional cheat treat or meal is fine. Be careful, though...if you don't limit the "cheats", they add up. 

If you knew you would have to run 19-24 min on a treadmill for a 4 oz. glass of wine, would you have that second glass?
Here are some more eye openers:
2 scoops ice cream = jog 14 minutes
2 slices of cheese pizza = 99 minutes of weight training
a snack-size bag of chips = strength training for 1 1/2 hours
a can of cola = an hour's run
a 260 calorie energy bar with 20 grams of sugar =climb stairs for 25 minutes.

**Minutes of exercises are based on a 155 pound person and of course it depends on how hard you are working, but you get the picture! Choose your snacks wisely and be willing to pay the price!
