Beef & Bean Chile Verde

Chile Verde, usually a slow-cooked stew of pork, jalapeƱos and tomatillos, becomes an easy weeknight meal with quick-cooking ground beef and store-bought green salsa. Make it a Meal: Serve with fresh cilantro, red onion and Monterey Jack. Add your favorite hot sauce.

1 pound 93%-lean ground beef
1 large red bell pepper, chopped
1 large onion, chopped
6 cloves garlic, chopped
1 tablespoon chili powder
2 teaspoons ground cumin
1/4 teaspoon cayenne pepper, or to taste
1 16-ounce jar green salsa, green enchilada sauce or taco sauce
1/4 cup water
1 15-ounce can pinto or kidney beans, rinsed

Cook beef, bell pepper and onion in a large saucepan over medium heat, crumbling the meat with a wooden spoon, until the meat is browned, 8 to 10 minutes. Add garlic, chili powder, cumin and cayenne; cook until fragrant, about 15 seconds. Stir in salsa (or sauce) and water; bring to a simmer. Reduce heat to medium-low, cover and cook, stirring occasionally, until the vegetables are tender, 10 to 15 minutes. Stir in beans and cook until heated through, about 1 minute.

Question from Kirsten: "Melissa, why do YOU personally drink Shakeology?"
My answer: Quality, whole food nutrition and tons of antioxidants that help my body to work more efficiently. The fact that I am getting the nutrients that my body NEEDS, means that I don't CRAVE junk food. Since I usually drink mine in the morning, it guarantees that I eat my breakfast each day (I am not much of a breakfast eater). I feel more energetic when I drink it - mostly because of the proper nutrition it provides my body. For me, the cost of my Shakeology is saving me tons of money on future medical expenses, because it helps me stay healthy.

Simple steps to start YOUR healthier lifestyle

CHANGE is hard and changing our EATING HABITS is not as easy as it seems--especially when you have a family to get on board with healthier versions of the foods they love! The key??? START SMALL! Here are some tips:

--Start subbing healthier ingredients slowly. Replace oil with applesauce in muffins, add extra veggies to stew and replace one snack with piece of fruit.
--Reduce sugar in your recipes by 1/4 cup. In most baked goods, you will not notice!
--Add another vegetable to dinner. For example, if we have chicken, I will steam broccoli and also serve raw carrots (my kids' preference) and ask them to take both.
--Add in one extra glass of water every few days. Give them a water bottle that is their own and make it a goal/contest to drink by end of day. Use a sticker chart or something to reward the kids at the end of the week.
--Search the web or Pinterest for a healthy version of a processed food that you buy. Less chemicals, healthier ingredients, less sugar and fun to try something together!

FAT loss, NOT weight loss

I <3 this!!! I know from experience how hard it is to stop obsessing about the number on the scale. The truth is that if you exercise and you eat right, you carry your weight differently. The scale might be reflecting your lower body fat percentage. Did you know that muscle is much more dense and compact than fat? Think about that the next time you are getting frustrated with the scale. Start looking at other ways to measure your progress. How do your clothes fit? How are you feeling?

Healthier version of Chili

1 1/2 cups chopped red onion (about 1 medium)
1 cup chopped red bell pepper (about 1 small)
8 ounces extralean ground beef
2 none garlic cloves, minced
1 1/2 tablespoons chili powder
2 teaspoons ground cumin
1 teaspoon sugar
1/2 teaspoon salt
1/2 teaspoon dried oregano
1 none (19-ounce) can red kidney beans, drained
1 none (14.5-ounce) can no-salt-added diced tomatoes, undrained
1 none (14-ounce) can low-sodium beef broth
1 none (12-ounce) bottle beer (such as Budweiser)
1 tablespoon yellow cornmeal
1 tablespoon fresh lime juice

Combine first 4 ingredients in a large Dutch oven over medium-high heat. Cook 5 minutes or until beef is browned, stirring to crumble. Stir in chili powder, cumin, sugar, and salt; cook 1 minute. Add oregano and next 4 ingredients (through beer) to pan; bring to a boil. Reduce heat, and simmer 15 minutes. Stir in cornmeal; cook 5 minutes. Stir in juice.

Dijon Green Beans Recipe

A friend of mine made this side dish and it was AMAZING!!!

Dijon Green Beans Recipe
1-1/2 pounds fresh green beans, trimmed
2 tablespoons red wine vinegar
2 tablespoons olive oil
2 teaspoons Dijon mustard
1/2 teaspoon salt
1/4 teaspoon pepper
1 cup grape tomatoes, halved
1/2 small red onion, sliced
2 tablespoons grated Parmesan cheese

1. Place beans in a large saucepan and cover with water. Bring to a boil. Cook, covered, for 10-15 minutes or until crisp-tender.
2. Meanwhile, whisk the vinegar, oil, mustard, salt and pepper in a small bowl. Drain beans; place in a large bowl. Add tomatoes and onion. Drizzle with dressing and toss to coat. Sprinkle with cheese. Yield: 10 servings.
Nutritional Facts
3/4 cup equals 54 calories, 3 g fat (1 g saturated fat), 1 mg cholesterol, 167 mg sodium, 6 g carbohydrate, 2 g fiber, 2 g protein. Diabetic Exchanges: 1 vegetable, 1/2 fat.

Insanity Max:30 - Month 1

Here they are....Jeff's Month 1 Insanity Max:30 results!!!

Truth be told, Jeff has a love/hate relationship with this program. He gives it his all in the workouts, and he doesn't use the modifier. This last week he finally made it all 30 minutes without Maxing out!!

Jeff is down about 6 pounds, and he is definitely leaner, and the muscle definition is definitely more prominent! We are excited to see what month 2 brings!!
