Healthy Breakfast

Sometimes I don't want my Shakeology for breakfast. What?!?! Today, I decided on an egg, strawberries, and GF toast, with a little coconut oil. Don't worry, I will have my Shakeology with lunch or as an afternoon snack (I know you were concerned 😉).

15 Day Fitness Challenge

Check out these protein power egg cups..Two egg cups count for one protein and one veggie if you are 21 Day Fixing (per recipe below)--these are great for grab and go when you are on the run and can be reheated in the microwave! Want to get creative? Let your kids customize their own with turkey breakfast sausage crumbles, cheese, chopped ham, and veggies to their taste!

12 large eggs
sea salt
ground black pepper (to taste; optional)
1 bag (10 oz) baby spinach, chopped
1 medium red bell pepper, chopped
2 green onions, chopped
Nonstick cooking spray

1. Heat oven to 350° F.
2. Beat eggs in a large bowl. Season with salt and pepper if desired. Add spinach, pepper, and onions to egg mixture; mix well.
3. Lightly coat a twelve cup muffin tin with spray.
4. Evenly pour egg mixture into muffin cups.
5. Bake for 15 to 20 minutes, or until a toothpick inserted into the center of cups comes out clean.
Makes 12 egg cups; 2 cups per serving

**Gluten Free Berry Crostata**

I made this delicious ‪#‎Glutenfree‬ Crostata yesterday. It was a huge hit in my house! It makes a great dessert, or a fantastic breakfast dish! We topped it with whipped cream. Yum!

Introducing Shakeology Boosts

Can I just tell you that these boosts are AMAZING! I use the Digestive Health boost almost daily. Even with the pre and probiotics in my Shakeology, I still needed to take a probiotic supplement. Not anymore!!! Just 1/2 scoop of the Digestive Health boost in my Shakeology, keeps the pipes running smoothly . I'm totally going to get some of the Greens boost to hide in Connor's Shakeology. Do you do leftovers?

It's leftover night in my house tonight. I made my turkey burger 🍔 patty into a delicious salad, with all my favorite burger fixings - avocado, cheese, mustard, dill pickles, onion, tomato, and ranch dressing. 😋😋 By the way, who else has tried the Bolthouse Farms line of salad dressings, made with yogurt. I definitely give them a thumbs up

Back to school

It's the first day of school in our house, and I am ready with my laptop and my Shakeology :). If you didn't know already, I home school my kids. This is our 5th year of home school, and it was definitely the right move for our family. My daughter, Cassie, is starting 8th grade (and taking 3 courses for High School credit, and 2 course for High School AND college credit). My son, Connor, is starting 6th grade. My son, Brendan, is starting 3rd grade. My youngest son, John Paul, will be starting Kindergarten. It is definitely an exciting day for us!
