Grilled Cheese

A healthier take on the grilled cheese sandwich.
2 slices Ezekiel bread
1 wedge laughing cow cheese (softened)
sliced tomatoes
sliced jalapenos (optional)

Spread cheese on frozen Ezekiel bread. Add tomato and jalapeno and top with 2nd piece of bread. Cook in skillet as you would a traditional grilled cheese sandwich - butter is not necessary because the frozen Ezekiel bread will toast up nicely as you heat.

Piyo Lower Define

My favorite Piyo workouts are Lower Define and Upper Define. They are both quick, easy, effective workouts. This is the warrior series from the Define Lower workout. It is a great variation on the traditional yoga warrior series because PiYo does not use static moves, but instead works on slow movements to strengthen while stretching.

Jalapeno Deviled eggs

I love spicy things! Here is my spicy twist on a deviled egg!


Jalapeno deviled eggs
- 2 hard boiled eggs halved, yolks scooped out into small bowl. Set whites aside.
- Mash yolks with fork or spoon.
- Add to egg yolks in bowl - about 1 tablespoon mayonnaise (I use light or olive oil mayo), 1 Tablespoon yellow mustard and 1 Tablespoon diced jalapeno.
- spoon yolk mixture into whites, and sprinkle with a bit of cayenne pepper. Enjoy!

Gluten Free Apple Muffins

I try to stick to a low gluten diet for my 4 year old. He's not gluten intolerant, but this mama has noticed that his behavior is drastically better when we keep the gluten at a minimum. The only problem is that he LOVES pancakes, waffles, sandwiches and muffins. I have had to get creative and find some good, easy recipes to keep him happy. These gluten free apple muffins are a FAVORITE!



Gluten Free Apple Muffins
Ingredients:
-2 cups good all-purpose gluten-free flour blend
-1 tsp. xanthan gum
-1½ tsp. baking soda
-1 tsp. salt
- ½ cup butter, room temp, or non-dairy substitute
-1¼ cups sugar
- 2 eggs
- 1 tsp. vanilla
- 1 cup of grated or finely chopped apples, or applesauce
- ½ cup buttermilk or non-dairy substitute

Instructions:
- Preheat oven to 325°. Line muffin pan cavities with paper liners and set aside.
- In a medium bowl, whisk together flour, xanthan gum, baking soda, and salt. Set aside.
- In the bowl of your stand mixer, cream the butter and sugar for 1 minute.
- With mixer running on low speed, add the eggs one at a time.
- Add vanilla extract, apples, and buttermilk and beat on high for 1 minute.
- Add half of the flour mixture into the apple mixture and mix on low speed until mixed in. Repeat with remaining flour mixture. Mix for another 30 seconds, or until dry ingredients are mixed in.
- Use a large cookie or ice cream scoop to fill muffin cavities ¾ full. Using my scoop, I usually get around 17-18 muffins.
- Bake at 325° for about 18-22 minutes, until tops have browned and muffins check done. Depending on the size you make them and how hot your oven runs, the baking temperature will vary. Use the toothpick test to check for doneness. A toothpick inserted in the center of a fully cooked muffin will come out with moist crumbs attached.
- Cool in muffin pan for 5 minutes, then remove muffins to cool on a cooling rack. When muffins are room temperature, you can store in an airtight container or place in freezer in a gallon freezer bag.
Makes about 18 muffins.
**Notes - I often use coconut oil as a sub for butter (health preference). I am also not one to keep buttermilk on hand, so I sub with skim sour milk. If you have never made sour milk - to make 1 cup sour milk for baking, use 1 tbsp vinegar or lemon juice and enough milk to equal 1 cup. Stir and let stand for 5 minutes before using.

What is coaching?

You asked, so here it is!
A few weeks ago, I put together this 5 day SNEAK PEEK into what I do as a Coach.

Calf raises

Need a quick exercise that you can do almost anywhere? Try calf raises. Standing up, lift up on your toes and then lower back down (but don't let your heels touch). Repeat for 50 seconds then hold up on your toes for 10 seconds. I love doing this exercise while I brush my teeth.

Homemade Apple Bread

Apple Bread
Ingredients:
3 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon ground cinnamon
1/4 teaspoon baking powder
3 eggs, beaten
3 cups shredded, peeled cooking apples (4 medium)
2 cups sugar
2/3 cup cooking oil
1 teaspoon vanilla

Directions:
-Grease and flour three 7-1/2x3-1/2x2-inch or two 8x4x2-inch baking pans. Set aside. In a medium bowl combine flour, soda, salt, cinnamon, and baking powder; set aside.
-In a large bowl combine eggs, apples, sugar, oil, and vanilla. Stir in flour mixture just until moistened. Pour batter into prepared pans. Bake in a 325 degree F oven for 45 to 55 minutes or until toothpick inserted in center comes out clean. Cool in pans on wire racks for 10 minutes. Remove from pans. Cool on wire racks. Wrap and store overnight before slicing. Makes 30 servings.

Shakeology MISCONCEPTION #5

Shakeology is only for weight loss.
Most shakes are marketed this way. But here’s the thing. Anything will induce weight loss if it’s low enough in calories. Just because you are drinking a shake, does not mean the fat will melt off. Actually, if you are not getting enough nutrients and calories you will actually inhibit your weight-loss efforts. Shakeology is about HEALTH. When you put the RIGHT nutrients in your body that it needs to develop, heal, recover, repair, and thrive, you may ultimately have MORE energy, LESS cravings, and FEEL better therefore you eat less and become more active. Shakeology MISCONCEPTION #4

Shakeology is expensive.
To anyone who feels this product is expensive I know that I have not done my diligence in breaking down its REAL VALUE. Most people will agree that they would spend an average of $3 to $7 on a HEALTHY nutritious meal. I know most store-bought salads cost even more than that, and don’t contain nearly the dense concentration of nutrients. But on average, I think we can all agree healthy meals run between $3 and $7. Shakeology, at $4.33 per shake, comes in on the LOW END of average. (You can make Shakeology into a breakfast or lunch that you’d be buying anyway.) Not only are you spending less than you normally would, you’re also getting vital nutrients your body needs, that you just can’t get from your run-of-the-mill salad, plus the normal range of vitamins and minerals. So you can replace your VITAMINS, too. Sure, you may need a specific vitamin, based on your conditions, geography, or age—but in general, Shakeology will provide you with a solid base of your whole-food nutrients.
When was the last time you went to your grocery store and bought THIRTY meals all at once? Typically, I’m guessing, you buy a few days’ worth each time. When you buy a bulk bag of Shakeology, you are buying 30 of your shakes up-front. That means you’ll spend less money at the grocery store. Because of the grocery savings, I actually deduct my monthly Shakeology from my grocery budget. For the price, I cannot duplicate its vast quality of ingredients and nutrients.

Shakeology MISCONCEPTION #3

Shakeology is just a bunch of extracts, with no whole-food ingredients.
That’s not true. Whenever it’s possible and sustainable for the formula, the superfoods in Shakeology are preserved in their whole-food state to retain maximum nutrient value. It’s a very difficult process to use whole, plant-based ingredients so that the formula retains as much nutritional value as possible, but Shakeology has a whole team of scientists whose mission is to maximize the nutrition in every ingredient in Shakeology. Shakeology MISCONCEPTION #2: Shakeology is about comparing carbs, proteins, and fats to other shakes.

This is not at all what you should be comparing when you look at other shakes versus Shakeology. Sure, other shakes have 0 grams of sugar. But how do you think those shakes achieve that? Hint, it’s not natural. Yes, that’s right, they are probably using ARTIFICIAL sweeteners to get to 0 grams of sugar. Even fruit has sugar in it. A shake with 0 grams of sugar is using ARTIFICIAL sweeteners. Shakeology has NO artificial sweeteners, NO artificial colors, NO soy, NO artificial stimulants, and NO artificial flavors. One of its main sweeteners is Stevia, which is plant-based.

Meaning just a shake that provides extra protein. I can’t blame the general public for thinking this since “protein shake” has become nearly an interchangeable term for ANY shake. But, all shakes are not created equal—especially ones that contain superfoods. Shakeology is a very nutrient-dense shake that can be used for breakfast, lunch, or dinner. You’d have to eat a whole lot of fruits and vegetables to equal the nutrition in a single glass of Shakeology—and you probably couldn’t do it for less than 170 calories. Shakeology makes it very easy to cut your calories without substantially cutting down your daily volume of nutrients needed. Truth be told, the majority of people are WAY MORE nutrient deficient, than they are protein deficient. So why just stop at a protein shake?
