Fresh Raspberry-Mousse Almond Crumb cake




Fresh Raspberry-Mousse Almond Crumb cake

Ingredients:
1 cup unbleached all-purpose flour
1/3 cup sugar
1/8 teaspoon sea salt
5 tablespoons unsalted butter, chilled, cut into small pieces
1/2 cup low-fat vanilla yogurt
1 1/4 teaspoons pure vanilla extract
1/2 teaspoon almond extract
1 large egg
1/2 teaspoon baking powder
1/4 teaspoon baking soda
4 ounces light cream cheese, room temperature
1/3 cup raspberry jam or preserves (preferably seedless)
3/4 cup fresh raspberries (optional)
3 tablespoons sliced almonds

Directions:
1. Preheat oven to 350 degrees F. Combine flour, sugar, and salt in a large bowl; cut in butter with a pastry blender or potato masher until crumbly. Reserve 1/2 cup for later use.

2. Add yogurt, vanilla and almond extracts, egg, baking powder, and baking soda to mixture. Beat with electric mixer at medium speed until blended. Pour into 8-inch-round nonstick baking pan.

3. In a small bowl, combine cream cheese and jam; beat at low speed until blended. Spread evenly over batter. Top with reserved flour mixture, sprinkling of raspberries (optional) and almonds.

4. Bake for 45 minutes, or until edges are browned and center is nearly set. Cool on a rack. Refrigerate 3 hours, or until well chilled. Cut into 8 wedges.

Fudgy Flourless Brownies

I LOVE brownies!!! I'm going to have to give this healthier version a try.
 
Fudgy Flourless Brownies
1/2 cup sliced almonds
1/2 cup unsweetened cocoa powder
1/2 cup sugar
1 ounce unsweetened chocolate, chopped
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup packed pitted Medjool dates
1/4 cup unsweetened almond milk
2 tablespoons extra-virgin olive oil
1 teaspoon vanilla extract
2 large egg whites
2 tablespoons mini chocolate chips, optional

Directions:
1. Preheat oven to 325ºF. Line an 8-inch square pan with foil, allowing a 1-inch overhang. Coat with cooking spray.
2. In a food processor, blend almonds, cocoa, sugar, chocolate, baking soda and salt until ground. Pulse in dates, almond milk, oil and vanilla until a smooth paste forms.
3. Beat egg whites until medium peaks form. Stir in one-third of almond mixture, then fold in remaining mixture. Spread in baking pan and sprinkle with chocolate chips, if desired.
4. Bake until a toothpick inserted 1 inch from edge comes out almost clean, about 30 minutes. Let cool in pan on a wire rack.

Mini Pineapple Coconut Banana Bread


Ingredients:
-Canola Oil Spray
-1 cup Almond Meal
-¼ cup + 2 tbsp. Light Brown Sugar
-¼ cup Old Fashioned Rolled Oats
-2 tbsp. Flaxseed Meal
-¼ cup shredded unsweetened coconut
-½ tsp. baking powder
-¼ tsp. salt
-¼ tsp. Ground Saigon Cinnamon
-1/3 cup mashed, very overripe banana (about 1 small banana)
- ¼ cup canned crushed pineapple
- 2 Eggs
-½ tsp. Vanilla Extract
Preheat oven to 350F. Spray a mini loaf pan with canola oil spray and set aside. In a large bowl, stir together the almond meal, brown sugar, oats, flaxseed, coconut, baking powder, salt and cinnamon.
In a medium bowl, stir together the mashed banana, pineapple, eggs and vanilla. Pour wet ingredients into dry ingredients and mix until just combined.
Pour batter into mini load pan.
Bake for 55-65 minutes, or until a knife inserted into middle of bread comes out clean.
Cool bread for fifteen minutes in pan before carefully removing from pan and transferring to a wire rack to cool completely.

Tips to a Flat Tummy

Because who doesn't want a flat tummy? Give these tips a try...
1. Drink a glass of water before eating.
2. Eat five small meals a day.
3. Eat slowly.
4. Do cardio 20 minutes a day, five days a week.
5. Know your serving sizes.
6. Good posture: It strengthens tummy muscles.
7. Swim!
8. Strengthen your core.
9. Cut out sweets.
10. Do push-ups. Accurately.
11. Do reverse sit-ups.
12. Never skip breakfast.
13. Drink lots of water everyday.
14. Reduce salt intake.
15. Avoid stress.
16. Get at least 7 to 8 hours of sleep every night.
17. Cut down on alcohol consumption.
18. Color your plate.
19. Cut out fast food.
20. Cut out soda.
21. Don’t starve yourself.
22. Don’t isolate just your stomach.
23. Eat five servings of fresh fruit or veggies every day.
24. Enrich your diet with fiber.
25. Do crunchies with an exercise ball.

My Story


Everyone has a story, and that story is full of that individual's struggle to overcome tough obstacles. My biggest obstacle as an adult has been my weight. It wasn't necessarily the numbers on the scale, but instead, it was how I felt about my appearance, and how I let that affect my confidence and personality. The Photos below are both of me. The one on the left is me at my heaviest weight of over 235 pounds. Yes, I am VERY pregnant with my 4th child in the photo, but I was still over the 200 pound mark the year following my pregnancy. The photo on the right was taken pre-workout on Monday (4/14/14). I was a tight size 18 before I started my journey. Now I am a size 10, and my goal is to go down at least one more size.

Here's my story:
In high school, I was extremely athletic. I was a gymnast, a dancer, on the swim team, I even ran cross country for a short time. I was 125 pounds, lots of muscle, and I NEVER worried about my weight...I am sure one of only a few high school girls at the time that didn't obsess about it. I graduated high school in 1995. My first year of college, I gained the ever dreaded freshman 10! I was still pretty active, but my eating habits were HORRIBLE!!! Over the next few years, I gained a little bit here and there because I ate a lot of fast food and junk food. By the time I graduated from College, I was up to 155 pounds. A year later, I got married (at the same weight). For the next 3 years, I gained about 5 pounds a year. I really struggled to get my eating down, and a regular exercise routine going. In 2001, I got pregnant with my first child. My weight hit 208 by the end of my pregnancy, and I lost about half of that pretty quickly. I managed to drop my weight down to 169 before I finally got pregnant with my second child in 2003. He was born in May of 2004 (a week before my 27th birthday) and I topped the pregnancy chart at 216 pounds. I lost much of the baby weight pretty quickly, and managed to get myself back down to 169 again (This seemed to be a plateau I couldn't break through). In 2006, I found myself pregnant with baby number 3. I hit 216 with that pregnancy also. My 3rd baby was the smallest of ALL of my kids at birth. I turned 30, 3 months later. Guess what, your metabolism really does slow down at 30! This time around, I struggled to lose the baby weight, and hovered around the 190 mark until I got pregnant again in 2009 with baby #4. My weight skyrocketed with that pregnancy and I reached 235 pounds by the end of my 7th month. I finally told the nurse at my doctor's office that I didn't want to know my weight anymore when I came in. Honestly, I don't know what my weight topped out at for that pregnancy. After baby #4 was born, my weight dropped to 207, where it hovered for the better part of a year and a half. Finally, I got fed up and angry enough to do something about it. 2 weeks before my 34th birthday, I buckled down and started to lose. I was down about 10 pounds within a month, when I ended up with a bad case of strep throat and couldn't eat anything for about a week. In the weeks following, I never really got my appetite back. I was walking daily, so between the lack of food and the increase in exercise, I dropped back down to my ever dreaded plateau - 169 pounds. I sat at that plateau for 5 months, until I finally broke through my plateau and lost 8 pounds on the Advocare 24 Day Challenge. I was disappointed that I lost only a few pounds when others were losing like crazy with Advocare. I didn't let that stop me, though! Instead I started getting even more serious about working out and eating right AND staying focused! I hit another plateau at 160 pounds, which I finally manage to break through about a year ago. I have discovered the art of slimming and toning through my Beachbody workouts and drinking Shakeology. I have VERY slowly started to see the scale go down. Right now I am hovering around the 150 mark (less that I was when I got married). Even though I have been losing weight EXTREMELY slowly, I am thrilled at the fact that I can consistently maintain my numbers!! My goal is 145 pounds. I WILL get there. following my Ultimate Reset in February, I dropped to 148...the lowest i have been in a LONG time! In the past few months, my weight still fluctuates between 150 and 155. I KNOW I am gaining muscle, and I continue to lose inches, so I am not complaining. Even though my numbers aren't where I want them yet, I am not upset. I think the way my body is transforming my shape with slimming and toning, makes me feel way more confident about myself anyway...and make my clothes fit better! I am healthier, happier and more confident that I have been pretty much my entire life. You know what else? My kids are happier and healthier and have a great example to follow with my actions. THAT is what makes it all worth while!
I am a normal person, just like you. I struggle daily, just like you. I make mistakes and fall off the wagon, just like you. I am do the best I can everyday, and I have learned that it isn't the mistakes you have made that define you, it is what you learn from them and how you proceed in the future that does.

Fresh Pineapple

Who else LOVES fresh pineapple? Do you cut your own or buy it already sliced? I slice my own...it takes a bit of practice, but it is easy (the directions are on the little tag that comes with the pineapple).

How to pick a sweet pineapple - find one that is MOSTLY green with a little bit of yellow at the bottom. I haven't gone wrong with this method yet!
