Transformation Thursday: Kimberly


Wow!!! Kimberly P., mother of 8, won $1000 in a Beachbody Challenge, by using Insanity!!! Amazing!!!


Here is her story:
I am Mom!!! I have 8 children, ages 26 to age 5. I am now also Grandma. And I am finishing up with my 20th year of homeschooling my children. That is my life. I have my children with me 24 hours a day, 7 days a week. While that is fantastic, and I love that they are with me, it was difficult on me. After cooking, cleaning, and schooling, there was simply no time left for me to take care of me. The constant cycle of being pregnant and nursing took its toll. I was VERY unhappy with my weight. Well, over 20 years it caught up with me, and I was 110 pounds overweight. Nobody ever expected me to be anything other than Mom, so I never saw it within my power to make the change, until 2012 that is, when I saw it in myself that I could change.

Time was, and always will be my biggest challenge. I am BUSY. I do about 125 loads of laundry and over 100 loads of dishes EVERY MONTH. And there is cooking, shopping, vacuuming, and the insurmountable task of clutter maintenance. (Kids will do that to you, husbands too, for that matter.) And there was the homeschooling to be done. Did you know that a homeschool kid can escape from their seat and disappear within 7.6 seconds once Mom's back is turned? So I needed a program that was quick. I don't have time. And I need one that is loud. I need loud. My kids like to interrupt. As long as I can only see their mouths moving, and see that they are not injured, I am good to go.
I did Insanity because somebody told me that I couldn't do it. We have almost every program that Beachbody sells. So one day I was perusing the shelf, deciding on what program to start and my husband said "Why don't you do Insanity?" I said "Dude, we have like five years of workouts on our shelves. Insanity is probably in year four." He said "I bet that you can do it." I said "I bet that I can't do it." Yes, that is right. I told myself that I couldn't do it. So, clearly to show my husband that I could in fact NOT do Insanity, I started Insanity. And do you know what? He was right. I CAN DO INSANITY! And I can do it better than him (shh! Don't tell him that I said that.)
Insanity gave me confidence. And now I want to go help others find that same confidence. So I am going to become a certified Insanity instructor. I want to reach out to anyone who thinks that they could never do this. Those who would never walk in gym and try it. Those who have every excuse not to do it. I beat the excuses and I want to show everyone that they CAN do it.

Tell Me something Tuesday: Family car

We are a one car household. Yup, a family of 6 and only 1 car. We have been a 1 car family for nearly 2 years now. I would like to say it is because we are being environmentally conscious and trying not to add to the problems of our planet. The reality is that we are avoiding another car payment. Before my husband started his own company, he worked for companies that provided him with cars for work. We didn't have to worry about car payments, upkeep, or gas. When he left his last job to pursue his dream of building his own business, we lost the second car. The timing could not have been more perfect, though. We had just started home school, and his office is only a short 10 minute drive away, so we didn't really NEED a second car. It is amazing how you can adapt your life to work more efficiently, when you are forced to take out a few conveniences in your day. At some point, we will add another car back into our household, but until then, we are plugging away with just one .

Fat vs. Muscle

 What a great visual!  It takes way more fat to equal the same weight as muscle.  it is also a good reminder that if you are struggling with the numbers on the scale, but you ARE exercising and eating right, you may be building muscle.  Be patient...once that muscle is there, it will help to burn more fat!

Transformation Thursday: Rhonda-Sue

This mom of 3 got her youthful energy back and lost over 30 lbs with Shakeology® and Beachbody workout programs (Insanity, Turbofire and Aslyum). She entered her life-changing story in the Beachbody Challenge and won $1,000.


Read her story:
Before I started any Beachbody program, I felt miserable. I was so uncomfortable in my own skin and self-conscience about my body. I HATED getting dressed and stayed in pajamas all day sometimes just to avoid putting on clothes. Having a five year old, three year old, and eight month old baby at the time, I felt tired, drained, and lethargic...ALWAYS. After I stopped breast-feeding, I started drinking energy drinks to gain energy but it didn't help. I felt very unhappy and it was starting to take a toll on other areas of my life. Completing a round of Insanity and then 90 days of Turbo Fire and now Insanity:Asylum has been LIFE CHANGING!!

The greatest challenge that I faced before beginning my Beachbody programs was finding the time to work out. As mentioned, I have three children ages five and under. I am in a full time Master's/Credential program. I take care of my elderly parents. I manage my family's household. I have Pre-School and Kindergarten drop offs and pick ups AND my husband works out of town during the week. But when you want it bad enough, you FIND THE TIME!! Thank God for Beachbody programs being "at-home" and the Challenge groups that I participated in that kept me accountable...because I had EVERY reason to fail and every EXCUSE to not workout. Insanity is short enough that I am able to get my workout in during the baby's nap time or when all of the children are sleeping at the end of the day. And by doing beachbody programs, I was able to take back my energy which actually increased my productivity during the day!!

Through Insanity and Turbofire, and now Insanity: Asylum, I have lost 35 lbs. and MAJOR inches. My husband says that I am "half the woman I was." I bought a new bathing suit the other day and it was a size MEDIUM, instead of the usual 2X-3X. I wore my bathing suit with a confidence and felt proud of how far I had come. I might not be at my goal weight yet, but it was the best feeling lounging by a pool without desperately searching for a towel to cover up with.

My life has changed since completing these beachbody programs. The person that I despised in my before picture is gone. I have my energy back... I have my confidence back... I have my youth back.... I have my LIFE BACK!! I am a new person and so very grateful that Beachbody programs paved the way for me to get healthy. I am eternally and genuinely grateful for this second chance at life that I have been blessed with. I am also very proud of becoming a Beachbody Coach and I am loving the positive influence that I am having on other people. I used to be so negative and down, and now I am just happy and grateful. Thank you, thank you, thank you Beachbody!!!

Tell Me Something Tuesday: organization


I am a planner. I like to make lists and schedules. I like to make sure that everything is neat and organized.I need to make sure everything has a place and a plan. I plan my weekdays to include, work, home school, workouts, and house hold chores. When things don't go according to my plan, I REALLY struggle to 'go with the flow'. I become flustered and irritable, and many times, I just want to break down and cry.
It's funny, I don't HAVE to plan, and I am also good with a spur of the moment activity (unless it interferes with my planned schedule). Spontaneous things, like a dinner with friends, a last minute party, or a super fun home school activity are easy for me to manage.  I sure wish I could find that happy place of being spontaneous when my plan isn't working out.

Skinny Buffalo Chicken Dip

Who says you can't have delicious snack food and still eat healthy? Give this tasty dip a try!!!
Skinny Buffalo Chicken Dip
8oz fat-free cream cheese, softened
1/2 cup reduced fat blue cheese or ranch dressing
1/2 cup Buffalo or Red Hot sauce
1/2 cup reduced fat blue cheese or mozzarella
2 cans chunk chicken breast (drained) or 2 cups shredded chicken breast

Directions:
Place cream cheese in a bowl and stir until smooth.
Add the rest of the ingredients.
Bake at 350 degrees for ~20 minutes or microwave 2-5 minutes until heated through!
Enjoy!

Transformation Thursday: Jessica L

Jessica lost over 84 pounds with the help of Shakeology and Turbofire and Turbojam, and she won $1000!! Jessica has an inspirational story, and it is a must read!!

Jessica's story:
In 3rd grade I hit puberty early- gaining weight and the nickname of miss piggy. At 9 yrs old I weighted 120 lbs. Growing up i Never really ate health. Fast food was a huge staple of my diet. My freshmen yr of highschool (2001) I was diagnosed with PCOS. All throughout h/s I weight greater than 200 lbs. Became super overwhelmed 1st sem. of college, I slept instead of attending class and eventually dropped out. Spring '05 I attempted school again.That summer I was raped- The last thing he said was "The fat ones are weak, that's why I chose you." I became bulimic took diet pills, played w/ bulimirexia. progressively got worse - and dropped out again leaving the state. Ate fast food 5xweekly 2+x daily. Constant migraines, cancer cells in my cervix, etc Before starting with BB products I hated myself, was horribly depressed, and felt worthless.So bad I would shut my eyes in the shower to keep from seeing all the fat on my body.

I had let my self get so heavy that it hurt to walk. My joints ached, and my legs were constantly touching to the point they were rubbed raw. I had a miscarriage that was horrible. I knew it was my fault completely - I couldn't take care of my own body and self. There was no way I could possible take care of a new innocent life, much less keep up with it. I had let myself go so much I convinced myself that my new husband would be the next to leave if i didn't make some sort of change in my life.

I chose to start with just shakeology and work on the nutrition side in the beginning because that was the hardest aspect of my life. Everything i had read and been told said fitness was only a fraction of being healthy. I figured that I had better start with my weakest spot. I chose to use portions of turbo fire and turbo jam hybrid because of how encouraging Chalene was to me. Super encouraging and made me feel great about myself when she said it's ok if you can't get all the moves - just keep moving! The shakeology supported my transformation tremendously. My crazy food cravings are completely gone. The shakeology completely satisfies my previously unruly need for candy bars, icecream, and cake. I have amazingly heightened energy, my mood as well as my clearness of thought is incredible. Digestion as well as regularity used to be a problem for me. Not anymore!!

My results have been phenomenal for me. I have dropped nearly 90 pounds and am still going strong. My husband can wrap his arms all the way around me. I can be active and walk without tears from my knees trembling from all the weight and rubbing together from the thickness. My life has changed tremendously. Fast food has been completely wiped from my diet. I have had clear papsmears. I rarely have an migraines. I breathe easier. I can wear clothes that aren't in the plus size section in stores. My husband pays me a lot more attention

Tell me something Tuesday: Night Owl vs. Early Bird

 I am a night owl, not a morning person. I could easily stay up until the wee hours of the morning, and and sleep away the morning much more easily that I can make myself go to bed early and get up early. In fact, before I was a stay at home mom, getting to work early was my biggest weakness! I loved working. I just hated getting up early to be there. I have tried over and over again to adjust my body clock, but I am pretty sure I am just built for nights.

Transformation Thursday: Mica

Tired of losing weight just to gain it back? Let me help you. I am a coach and I run challenge groups that support, motivate and encourage you as you reach for your goals!!!
Mica B. found the support she needed to make a permanent lifestyle change with her Coach and her ChallengeGroup, AND she won $500 in the Beachbody Challenge.


Here’s her story:
Over the years, I tried a number of different diets. But each one followed the same pattern: I’d lose weight in the beginning, but without fail, bad eating habits would creep back in and I’d gain the weight (and usually more) right back. My biggest problem was my bad back—I had a herniated disk. I used every excuse for not exercising…“I didn’t have time,” “the weather was bad,” you name it. I hated the way I looked. I was ashamed, embarrassed, and extremely unhappy with myself.
So finally, I went online to find someone who could give me the extra support I needed. I came across Team Beachbody and connected with my Coach, Erin. Her Challenge Group was a real life saver. Even when I was struggling, I wouldn’t let myself quit because I had to keep up with my friends. They pushed me, inspired me, and kept me on track. Their help and encouragement was awesome. And Shakeology was a big help, too—it totally cured my sweet tooth!
I started working out with Turbo Jam and immediately fell in love with Chalene and how much fun she made the workouts. I am officially a huge Chalene Johnson fan! So much, I moved to ChaLEAN Extreme and then tried TurboFire. The strength I’ve gained from these workouts is off the charts and I’ve seen a great deal of improvement with my herniated disk, too. As far as my figure goes, I’ve gone from a size 12 to a size 6 and lost almost 30 pounds!
I’m also much more active outdoors now. Before starting Beachbody programs, I had to sit down during rock climbing because of my back pain. Not anymore! Climbing. Hiking. Kayaking. Biking. All of these activities have become more enjoyable.
I actually look forward to working out and love the energy it gives me. I feel strong and don’t think I’ve ever had this much muscle tone—even in high school! The best part is I’m no longer self conscious in a short sleeved shirt and feel comfortable in my own skin again. I’m proud to say I’m in the best shape of my life!

Tell me Something Tuesday: Do you prefer cats or dogs?


I grew up a dog lover and was never really around cats. When I got married, we inherited some cats. I do like that cats are more independent and that I don't have to walk them or let them out to do their business. Now I have to clean up and take care of 4 kids. I am to a point in my life where I would be OK to NOT have any pets.

So, dogs are great (except the kind that jump up on you - I HATE that), and cats are great. I would say I enjoy them equally.

BAKED MOZZARELLA CHICKEN ROLLS

BAKED MOZZARELLA CHICKEN ROLLS

INGREDIENTS
2 lbs. boneless skinless chicken breasts (8 4-ounce pieces)
1 cup whole wheat Italian style bread crumbs (Panko OK)
6 tablespoons grated Parmesan cheese, divided
5 ounces fresh baby spinach
1 clove minced garlic and olive oil for sauteeing
½ cup part-skim ricotta cheese
⅓ cup beaten egg whites (I used something similar to Egg Beaters)
3 ounces fresh mozzarella cheese, thinly sliced
1 cup marinara sauce
fresh basil for topping

INSTRUCTIONS
Prep the chicken: Cut the chicken into 8 pieces and pound the pieces until they are thin (for quick cooking) and have expanded in surface area (for more filling). Place the breadcrumbs in a shallow bowl with 2 tablespoons of Parmesan cheese and set aside.
Prep the filling: Chop the spinach and sautee it with the garlic and just a drizzle of olive oil for 2-3 minutes or until just barely wilted. Combine the sauteed spinach with the ricotta, Parmesan cheese, and 2-3 tablespoons of the egg whites. Place the remaining egg whites in a separate shallow bowl and set aside.
Assemble the chicken: Oil the bottom of a large baking dish and preheat the oven to 450 degrees. Place one piece of chicken on a flat working surface. Put a spoonful of ricotta-spinach filling right in the middle and roll the chicken up so that the edges meet to form a “seam”. Dip the entire chicken roll in egg whites, and then roll it in the breadcrumbs. Place in a baking dish, seam side down. Repeat for the remaining 7 pieces of chicken. Bake for 25 minutes.
Finishing touches: After 25 minutes, the chicken should be cooked through (white on the inside) and browned on the top. Cover the chicken with the marinara sauce and slices of fresh Mozzarella. Bake for another 3-5 minutes or until cheese is melting. Sprinkle with fresh basil.
NOTES
Don’t try to cram all the pieces too close together because if the sides are touching each other, they won’t get crispy. Leaving a little space between each piece allows the breadcrumbs to bake, brown, and crispify perfectly.
BAKED MOZZARELLA CHICKEN ROLLS
INGREDIENTS
2 lbs. boneless skinless chicken breasts (8 4-ounce pieces)
1 cup whole wheat Italian style bread crumbs (Panko OK)
6 tablespoons grated Parmesan cheese, divided
5 ounces fresh baby spinach
1 clove minced garlic and olive oil for sauteeing
½ cup part-skim ricotta cheese
⅓ cup beaten egg whites (I used something similar to Egg Beaters)
3 ounces fresh mozzarella cheese, thinly sliced
1 cup marinara sauce
fresh basil for topping

INSTRUCTIONS
Prep the chicken: Cut the chicken into 8 pieces and pound the pieces until they are thin (for quick cooking) and have expanded in surface area (for more filling). Place the breadcrumbs in a shallow bowl with 2 tablespoons of Parmesan cheese and set aside.
Prep the filling: Chop the spinach and sautee it with the garlic and just a drizzle of olive oil for 2-3 minutes or until just barely wilted. Combine the sauteed spinach with the ricotta, Parmesan cheese, and 2-3 tablespoons of the egg whites. Place the remaining egg whites in a separate shallow bowl and set aside.
