Hungry Girl Buffalo Wing Mac and Cheese

I LOVE Hungry Girl recipes!!!  Here is one of my favorites!!

Hungry Girl Buffalo Chicken Wing Mac & Cheese:
4 1/2 ounces (about 1 cup) uncooked elbow macaroni
2 stalks celery, chopped
2 medium carrots, chopped
1 small onion, chopped
8 ounces cooked and shredded chicken breast
1 tsp chopped garlic
1/4 cup Frank's RedHot original
1/4 cup fat-free sour cream
2 wedges laughing cow swiss cheese
2 tsp yellow mustard
1 1/2 Tbsp Parmesan
1 Tbsp parsley
Cook pasta al dente. Drain and set aside. Cook celery, carrots and onion until softened, about 5 minutes. Add chicken, garlic and hot sauce to the skillet. Mix and set aside. In a micro-safe bowl, combine sour cream, cheese wedges, mustard, and remaining 1 Tbsp hot sauce. Mix and heat for 30 seconds. Spray 8x8 pan, place half of pasta into pan. top with chicken veggie mixture followed by the remaining pasta. Add sour cream mixture to the pan in an evan layer. Sprinkle with parm and parsley. Bake at 350 about 30 minutes.

PER SERVING 1/4th of recipe:
267 calories, 3.5g fat, 924mg sodium, 35g carbs, 4.5g fiber, 5.5g sugars, 23g protein
