This recipe is a twist on a family dish we love...
Easy grilled sweet potatoes and onions
Cut about an 18 section of aluminum foil, lay flat and spray top side with non-stick cooking spray. Wash one medium to large sweet potato. Slice thinly (about 1/4in slices). I also like to cut the larger slices in half. Lay evenly over foil - leave at least a 1-1 1/2 inch section of foil all the way around edge of foil. Slice 1/2 of a large onion and lay slices on top of potatoes. Sprinkle with cinnamon. Then use aprox. 1 tablespoon of a stick of butter, and place thin slices all over the potatoes and onions. Cover with another piece of aluminum foil, and fold edges of top and bottom pieces of foil together to create a tight seal. Place on grill over med to med high heat for about 30 minutes. Serve warm.
